Simply Sweet Recipe Treat

The leaves are turning colors on campus, and the weather is getting cooler. So what does that mean? Thanksgiving. It’s time to dust off the cookbooks and get out the special ingredients. I have a delectable treat that will make the holiday even more unique. Blueberry cake, anyone? This recipe will get you started on your holiday cooking adventure, whether at home or on campus. Grab your mixer and festive apron, and let’s celebrate and share with family and friends! 

Blueberry Cake 


  • 4 eggs
  • 1 cup shortening
  • 3 cups flour
  • 2 teaspoons baking powder
  • 3 cups blueberries
  • 2 cups sugar
  • 2 teaspoons vanilla
  • 1/2 teaspoon salt
  • 2/3 cup milk


Preheat oven to 350 degrees F. 

Separate egg whites from yolk and set aside. Cream together shortening, vanilla, 1 ½ cup sugar and egg yolks into a large mixing bowl. In a separate bowl sift together flour, salt and baking powder. Combine the dry ingredients with the creamed ingredients, alternating with the milk. Beat egg whites until stiff, mix in the remaining ½ cup sugar, fold egg whites into the batter and then fold in the blueberries. Pour blueberry cake mixture into a 9×13 pan, sprinkle sugar on top and bake for 45 minutes. Let cake cool or serve while warm and add butter. Yum! Enjoy!
